What is Maple Water?

Maple water is the natural maple sap that flows from a maple tree during a short time in early spring (March or April). It is loaded with 46 minerals, polyphenols being one of them.

Is Maple Water high in sugar and calories?

No no, don't worry, you will not get a stomach ache or anything of that nature.  Before maple water was a thing, people would drink maple sap from the buckets that were left on each tree to collect the water....problem was, the water was left all week and bacteria would grow in the sap, hence the stomach ache.

Ok, so how do you process the maple water so that does not happen?

Once the maple sap is collected, it goes through a microfiltration at the farm to remove any bark or dirt.  It is then immediately tested for various bacteria and then trucked in 30,000 liters tankers to the packing facility.  Once there, the water is once again tested and if all checks, it is UHT sterilized, which is high heat for 5-7 seconds and then cooled and packaged.   

All this needs to be done within 20 hours to ensure the water is perfect for consumption!!!!
